Turkey Lasagna


  • 1lb-1.5lbs of ground turkey
  • lasagna noodles (I like the no boil noodles)
  • 1 jar of marinara sauce
  • 15oz of ricotta cheese
  • 1 cup of parmesan cheese
  • 1 lb of mozzarella cheese
  • 1 egg
  • basil
  • garlic
  • onion
  • parsley flakes or fresh parsley
  • sea salt and black pepper
  • olive oil


This is a combination of the Barefoot Contessa’s lasagna and mine. It’s super simple and as you get comfortable with the recipe you can add or take out whatever you choose.

First, I cook the ground turkey in a skillet with a little olive oil and some garlic and onions. I buy the garlic already chopped and peeled and sometimes I buy the onions already chopped that you can find in your produce section. Then, I season my meat with all the spices listed above. As that is cooking I assemble my lasagna. In a foil pan, I put some of the marinara sauce on the bottom then layer my no boil noodles. In another bowl, I make my cheese mixture. I add the ricotta cheese, mozzarella, parmesan and egg together. Once the meat is cooked you can start to layer your lasagna in whatever way you want. I put more sauce on top of the noodles, then the meat and then the cheese mixture. Repeat until you have used all the ingredients. On top of the last layer of noodles I add more sauce and then more cheese. Here is where you can freeze the lasagna or you can bake in the oven. I put it in there at 375 degrees until cheese is bubbly. About 30 mins.
