My training client Gina recently gave me a spaghetti squash and since I’ve been seeing recipes for them all over the place, I thought I would try it. Well it couldn’t have been easier and I was surprised at how good it was.
- spaghetti squash
- olive oil
- salt and pepper
- herbs: basil, thyme, Mrs. Dash
- parmesan cheese
All I did was cut the ends off the squash and then in half lengthwise. I scooped out the seeds with a spoon and then rubbed the inside and the outside with olive oil, salt, and pepper. I pre-heated the oven to 400 degrees and then baked it for 35-40 minutes. After, I took a fork and scraped out the inside of the squash then seasoned it with herbs and parmesan cheese. The best part is that the squash takes on the flavors of anything you put on it. I ate it with a salad but it would be good with grilled shrimp or a pesto on top as well. Since I love pasta, I thought this would be a good alternative to all the carbs.
