So at our house we love a good Mexican night and when the baby gets here I’ll be all about adding the margaritas to it as well! I stumbled upon this when someone told me they cook their chicken in their crockpot and I thought that makes so much sense! This is what I do:
If you want to make a small amount (usually it’s just me and my husband) I do 1 boneless skinless chicken breast, 1/3 packet of low sodium taco seasoning and my semi-homemade salsa (found under the recipes section) all in the crockpot. I just pour enough salsa to cover the chicken a little. If you put too much don’t worry because the chicken will absorb it as it cooks. I cook it until it starts to fall apart and then take 2 forks and pull it like you would do pulled pork.
And that’s it! It’s sooo easy and so amazing in tacos.
Final product! Believe me, it’s the best ever!
